I remember one summer day, when Laurel came to visit my dad, it was at lunch time and dad was still eating. He invited Laurel to eat, but i had given dad all the left overs but dad said well just fix him something. I took a bowl of Spanish rice" out of the fridge and put it in a frying pan and added ketchup a little salt and pepper, and dished it up to Laurel when it was warm. He ate it , drank water and coffee and visited with dad. Mom came home later that day looked in the fridge and asked where the bowl of cracklings went . I stated what cracklings? She said the ones in the white plastic bowl, I said oh I feed that Spanish rice' to Laurel for lunch. Mom and dad decided to go down and let him know he had eaten cracklings for lunch just in case his ulcer begin to act up. It has always been a joke between us. Laurel used to say if i ever got married he wanted to talk to my husband before he ate anything I fixed. You will be missed. I wonder if they have Spanish rice in heaven.
