Obituary of Eunice Ellickson
Eunice M. Ellickson, died on Monday, April 9, 2012 at GracePoint Crossing, Cambridge, Minnesota at the age of 99.
She was born on January 14, 1913 to John and Lettie (Christenson) Anderson of rural Lake Park. She attended school at District 12.
On October 28, 1938, Eunice married Sydney Ellickson at Lake Park Lutheran Church. After living in Lake Park a short while they moved to a farm 5 miles north of Lake Park and just a mile west of her family farm. She resided there until her 92nd year and then moved to an assisted living community in Cambridge, Minnesota.
Eunice was active at Lake Park Lutheran, teaching Sunday school, she was Ladies Aid President and worked many hours in the church kitchen. She was a very hard worker, loved to garden, watch birds, always thrilled to spot a cardinal and read hundreds of books. Her home was always ready for company, and since she was an exceptional cook and baker, there was always good food to "put on the table".
Eunice worked several years in the café in Lake Park, having caramel rolls, donuts and bars ready for morning coffee all the while getting roasts and potatoes done for the lunch crowd.
For many years she baked and decorated wedding, graduation and birthday cakes for the Lake Park community. She made the best donuts and beautiful assortments of Christmas cookies. She was a wonderful mother and loving grandmother.
She will be greatly missed by her daughter Cindy Labatte of Cambridge; son John (Candrice) Ellickson of Bayport, MN; grandchildren Deborah (Tom) Jance, Catherine (Tim) Rossini, Rachel (friend Scott) Cell, Wade (Patty) Labatte, Aaron (Cindy) Ellickson and Andrew (Lora) Ellickson, Bridget Murray, Stacia Goheen, Megan Murray; great grandchildren John, Catherine, Ben, Sam, Charlie, Anna, Erin, Jack, Luke, Aiden, Lars, Leah, Brody, Connor, Molly, Bryce, and Wyatt; brother Chester (Evelyn) Anderson and sister-in-law Minerva Anderson, several nieces and nephews.
Eunice was preceded in death by her husband Sydney; sister Ruby Berland; brothers Orlo, Leslie, Wendell, Victor; great grandson Joe Rossini; and son-in-law Terry Labatte.
